INGREDIENTES
360g or 3 cups of all-purpose flour
180g of vegan margarine
3/4 tsp of salt
3/4 tsp of sugar
3 tbsp of water
1 and 1/2 tbsp of vodka

Step by Step:
Add the flour, margarine, salt, and sugar in a food processor. If you don't have a food processor, mix these ingredients with the flour by pressing them with a fork so that lentil-sized pieces of margarine mix with the flour.
Pulse a few times until lentil-sized pieces of margarine mix with the flour.
While pulsing with the processor, add 2 tablespoons of water and 1 and 1/2 tablespoons of vodka.
As soon as you finish adding the vodka, do not let your processor work the dough anymore because we want pieces of margarine inside the dough to give it the texture of shortcrust pastry.
Transfer the dough to a silicone mat and press all the crumbs until the dough forms.
To roll out the dough, dust the silicone mat or your countertop with flour and roll out the dough to a height of half a centimeter.
Place the dough in the pie dish and, holding the edges, fit the dough into all corners. Don't press with your finger, as this will make the dough thinner at the corners and it may break when you remove it from the dish. Here you can either cut off the excess or fold it inward. But always leave a good amount of dough on top of the edge for the dough to hold on to, otherwise, it will sink while baking.
Using a rolling pin, place the dough over the pie dish and, holding the edges, fit the dough into all corners.
Brush agave or maple syrup all over the dough, even if you are making a savory pie, you can use the syrup to finish the dough because it won't be too sweet.
Place parchment paper in the center, aluminum foil on top, and oven weights to prevent the dough from swelling in the middle. If you don't have these weights, it's okay, you can use beans instead.
Bake the dough in the preheated oven at 200ºC for 15 minutes.
Then remove the parchment paper and weights and return to the oven for another 15 minutes or until golden brown.
