Honey is not a vegan product, as it is produced by bees. Additionally, bees are at risk of extinction, which makes honey even rarer and more expensive. Often, what is sold as honey is actually an apple syrup mixed with honey or even just an apple syrup.
But it is possible to make "honey" with apples. For this, you will need 100% pressed apple juice, white or demerara sugar, lemon, and some dried edible flowers, such as chamomile or jasmine.

Ingredients:
500 ml of 100% pressed apple juice
2 cups of white or demerara sugar
1 ½ teaspoons of lemon
Dried edible flowers (optional)
Instructions:
Put the apple juice in a pan and add two cups of sugar and 1 ½ teaspoons of lemon.
When it starts boiling, reduce the heat and add the dried flowers (if desired).
Let the mixture cook until it reaches the desired consistency. To test the point, put a little honey on a cold plate and see if it runs too fast. If so, let the mixture cook a little longer.
When the honey is ready, put it in a container and let it cool.
