Vegan Cheese That Melts: An Easy and Delicious Recipe

You probably already know that vegan cheese is hard to come by. But what if I told you that it's possible to make vegan cheese at home? Today I'll teach you how to make a vegan mozzarella that melts perfectly, great for sandwiches, pizzas, and snacks.

INGREDIENTS:

  • 3 and a half cups of water

  • 4 tablespoons of agar agar flakes

  • 1 cup of raw unsalted cashews

  • 2 teaspoons of xanthan gum

  • 1 sachet of yogurt culture or 2 tablespoons of vegan yogurt

  • 1 tablespoon of salt

  • 1 teaspoon of apple cider vinegar

  • 1 cup of sweet potato starch

  • 1 and a half cups of refined coconut oil


INSTRUCTIONS:

  1. In a pot, add 3 and a half cups of water and 4 tablespoons of agar agar flakes. Mix well and set aside.

  2. In another pot, cook 1 cup of raw unsalted cashews for at least 20 minutes from boiling point. Turn off the heat, let it cool, and discard the water.

  3. In a blender, add the cooked cashews, the water and agar agar mixture, 2 teaspoons of xanthan gum, 1 sachet of yogurt culture or 2 tablespoons of vegan yogurt and blend until smooth.

  4. Put the mixture back in the blender and add 1 tablespoon of salt, 1 teaspoon of apple cider vinegar, and 1 cup of sweet potato starch. Blend again.

  5. While the blender is running, gradually add 1 and a half cups of refined coconut oil. Blend until the mixture is smooth.

  6. Transfer the mixture to a non-stick pot and cook over medium heat until you get the consistency of melted cheese.

  7. In a bowl, add plenty of salt and ice. Drop small amounts of cheese into the water and let it rest for 30 minutes.

  8. Your vegan melting cheese is ready! Store it in a container with a lid in the refrigerator for up to 1 week.
