Perfect for a vegan family lunch or romantic dinner for two, this Soy Protein and potato vegan Shepherd's Pie pleases everyone. A traditional dish now in its best vegan version. Best version? Yes! Because in addition to being cruelty-free, it is much richer in protein than the original version!
This was the dish I developed for my Valentine's Day dinner. Accompanied with vegetables in the oven and spinach, it was delicious! A very endulging, nutritious, and complete dish.
Shepherd's Pie is one of my favorite dishes! I don't know why it took me so long to make the vegan version of it.
This dish is so simple, so delicious, full of nutrients, the perfect combination of carbohydrates and protein. It brings together everything we love, potatoes, milk, butter, and "meat". I think it was the fact that meat was one o the ingredients that created an unconscious block on my head and simply deleted that recipe from my recipe options. But this year, on the eve of Valentine's Day, while I was thinking about the possibilities I had to create a romantic vegan dinner for two, in the middle of the pandemic, and at home. As soon as I saw the number of potatoes that I had to use that week, this darling came back to my memory as a nice vegan option for a delicious meal.
Which has more protein? Soy protein or Meat?
Textured Soy Protein, is an excellent option to replace meat in several recipes, since, according to the table of nutritional composition of foods at the University of São Paulo, 100g of soybeans contain 39.9g of protein. And in 100g of meat, there is 19.2g of protein. So, besides being much cheaper than animal protein, Soy Protein is cruelty-free, and also has more protein then meat! Can you believe it?
INGREDIENTS:
- 1L of water
- Half tablespoon of vinegar
- 2/3 cup of soy protein
- 1/2 teaspoon of sun dried tomato oil
- 1/2 onion
- 2 garlic cloves
- Shitake mushrooms (200g)
- 1 vegetable stock
- 2 sun-dried tomatoes
- salt
- 2 tablespoons of Soy Sauce
- 1 tablespoon of tomato extract
- 2 potatoes
- Vegan double cream
- Vegan Butter (to taste)
- Carrots
- 1 tablespoon of olive oil
- 1/2 tablespoon of balsamic vinegar
- 3 packets of spinach
