Vegan Cheese Fondue

Ingredients:

  • 60g vegan butter

  • 60g wheat or rice flour

  • 300ml white wine

  • 700ml water

  • 150g cashew nuts

  • 2 large garlic cloves

  • 40g nutritional yeast

  • 2 and 1/2 teaspoons salt

  • pinch of nutmeg

  • pinch of black pepper


Preparation:

  1. Cook the cashew nuts with plenty of water for 20 minutes from boiling point

  2. Discard the cooking water and add the cooked cashews to the blender with the garlic, salt, and 700ml of water until it becomes a milk.

  3. In a pan, melt the vegan butter over medium heat.

  4. Add the flour little by little, stirring constantly, until it forms a roux.

  5. Add the white wine and stir until the mixture is homogeneous.

  6. Add the cashew milk little by little, stirring constantly, until the mixture is creamy.

  7. Add the nutritional yeast and black pepper and mix until homogeneous.

  8. Cook for a few more minutes, stirring constantly, until the mixture is very creamy.

  9. Add the nutmeg, mix and serve with bread, toast, vegetables or whatever you prefer.
