Ingredients
1 medium eggplant
1 jar of sun-dried tomatoes (approximately 200g)
480g of firm tofu
1/2 garlic clove
4 to 5 tablespoons of oregano
Olive oil to taste
Lemon to taste
Salt to taste
Preparation Method
Cut the eggplant into very thin slices and cook them with a little oil until they are very soft and slightly golden. Season with lemon and salt and set aside.
In a food processor, process all the sun-dried tomatoes until they are crushed. Add the tofu, garlic, oregano, and olive oil to taste. Beat until a smooth paste is formed. Taste and add salt as desired.
Line a rectangular mold with parchment paper, leaving the edges out. Then, line the entire mold with the eggplant slices, starting with the bottom and then the sides.
Add a layer of the tofu paste over the eggplant, smoothing it with a spatula to make it even.
Add the layer of sun-dried tomatoes over the tofu paste, again smoothing it with a spatula.
Add the last layer of tofu paste over the sun-dried tomatoes, smoothing it with a spatula once again.
Cover the mold with the edges of the eggplant that were left out, pressing gently so that it is firm.
Refrigerate for at least 2 hours before serving.
Cut into slices and serve with crackers, salad, or as desired.
