Vegan Brioche Wreath: A Visual and Culinary Celebration for Christmas

If you're looking for a Christmas recipe that goes beyond taste, transforming your table into a visual spectacle, the Vegan Brioche Wreath is the perfect choice.

Inspired by the tradition of brioche and the festive spirit of Christmas, this recipe not only delights the palate but creates a memorable sharing experience at the table.

To prepare this wreath, you will need all-purpose flour, active dry yeast, warm water, sugar, salt, olive oil or another preferred oil, and vegan cream. If you can't find vegan cream, don't worry; you can substitute it with plant-based milk or try my recipe for vegan cream.

What makes this recipe special is the unique way it is served. Instead of cutting, you just share! Each guest can pull their own little ball, making the tasting experience even more special and interactive.


In the center of my wreath, I serve a cream made with my vegan Ricotta, prepared according to the recipe for Zucchini Terrine. Two other recipes worth checking out ;)


Step by step of the recipe:


Ingredients:

  • 453g all-purpose flour

  • 9g active dry yeast

  • 250g warm water

  • 23g sugar

  • 1 1/2 teaspoons salt

  • 40g olive oil (or other preferred oil)

  • Vegan cream for brushing the dough


Instructions:

  1. In a bowl, mix the flour and salt.

  2. In another bowl, mix the water, yeast, and sugar until completely dissolved.

  3. Add the olive oil or preferred oil and mix.

  4. Combine the mixtures, stirring until you get a homogeneous dough.

  5. Let the dough rest for 20 minutes.

  6. Knead the dough for 15 minutes on a floured surface or for 6 minutes in a stand mixer on high speed.

  7. Shape the dough into a ball, stretching the top until smooth.

  8. Let the dough double in size in a greased and covered bowl for 1 to 2 hours.

  9. Remove the dough, roll it out with a rolling pin to release air and form small balls.

  10. Place the balls in a greased round pan, leaving room for them to rise, and around the fondue pot.

  11. Let the dough rest for another 45 minutes.

  12. Brush vegan sour cream on the dough and bake at 170ºC (fan mode) or 180ºC (conventional mode) for 25 to 30 minutes.
