INGREDIENTS (Fluffy and Creamy Vegan Corn Cake)

  • 2 cups of corn flakes

  • 4 cans of drained corn (680g)

  • 2 cups plant-based milk at room temperature

  • 1/2 tsp of salt

  • 120ml oil (1/2 cup)

  • 2 cups of demerara sugar

  • 2 teaspoons of yeast

  • Oil or vegan margarine to grease the mold

  • Corn meal to sprinkle the mold

MAKING THE FLUFFY AND CREAMY VEGAN CORN CAKE

  1. Preheat your oven to 160°C in fan mode.

  2. Grease your mold with oil/vegan margarine and cornmeal.

  3. In a blender, beat the flakes until they turn into fine flour.

  4. Sieve into a bowl with the yeast and mix.

  5. In a blender, beat the oil, milk, corn and sugar until the mixture is smooth.

  6. Pour the mixture into the bowl where the flake is and mix until smooth.

  7. Place the dough in the greased pan and bake in your preheated oven for 2 hours or until a toothpick comes out clean when inserted into the center of the cake.

  8. Do not open the oven door until at least 1h50 has passed! This is very important!

  9. Remove the cake from the oven and let it cool for 20 minutes before unmolding.

  10. The cake will wilt, but this is normal. This is because canned corn brings a lot of moisture to the recipe.
