But in this post I will teach you how to make a Christmas Lentil Roast. I made this roast with a raw and unsalted mixture of walnuts, cashews, and hazelnuts, but you can use any nuts you like. As long as they are raw and unsalted.
INGREDIENTS:
180g mushrooms
250g cooked lentils with bay leaves
200g nut mix (raw and unsalted)
1 big onion
4 garlic cloves
1 stalk of celery
1 grated carrot
1 cup of panko flour
3 tablespoons soy sauce
2 teaspoons cane molasses

INSTRUCTIONS:
Bake the nuts in a preheated oven at 190ºC for 15 minutes.
While the nuts are in the oven, chop the vegetables into very small pieces.
After 15 minutes remove the walnuts from the oven and let them cool.
Meanwhile, in a pan over medium heat with a some oil, sauté the onion until it becomes translucent.
Add the garlic, and the rest of the vegetables and sauté until everything dries.
Add 3 tablespoons of soy sauce and 1 tablespoon of cane molasses and sauté again until dry
Turn off the heat and add the panko flour and 250g of cooked lentils and mix well
Take a portion of the mixture from the pan and blend it in a food processor until it turns into a paste.
Transfer the paste back to the pan and mix
Now that the nuts have cooled, remove the shells that are loose and cut the nuts into small pieces.
Add the chopped walnuts to the pan and mix
Place the mixture in a rectangular mold already lined with parchment paper, knead the ingredients well and bake in a preheated oven at 180ºC for 45 minutes.
After taking it out of the oven, leave it in the pan for another 15 minutes. This is so it doesn't break when unmolding.
And then just unmold, and your vegan roast is ready to be served.
