I always traveled a lot, so I ended up trying different vegan products around the world and I was missing all of them when I came back to Brazil. One of these products was oat milk from the Swedish brand Oatly. They became famous around the world for the incredible flavor they managed to achieve with vegan milk, in addition to being a super fun brand with funny communication on their packaging, billboards, and advertisements.
Unfortunately, Oatly does not yet sell its vegan milk in Brazil, and all the recipes that claimed to imitate its flavor over the internet actually left a lot to be desired. Until I decided to do something about it and venture myself into the kitchen to get to the taste and texture of the long-awaited perfect homemade Oalty.
Among the milk recipes I make here at home, this is the most delicious to drink cold and plain. It is also very tasty as a cold chocolate milk. Unfortunately this milk does not work to warm up because I do not have the chemical reagents that Oatly has, which is good, because my milk ends up being healthier, but when warmed up the properties of oats turn this hot milk into a porridge.
In the original Oatly recipe they put a good amount of vegetable oil. In order to avoid having to put so much, in my recipe I decided to put a good amount of cashew nuts that adds fat but is also healthy and gives a very good taste to milk.
Step by step of this homemade Oalty recipe:
INGREDIENTS:
- 1 cup of cashew nuts (soaked in water for at least 12 hours)
- 1 cup of rolled oats
- 1L of cold water
- 1 teaspoon of sugar
- 1/4 teaspoon salt
- 1/2 tablespoon of canola oil or refined coconut oil
INSTRUCTIONS:
- Put your cashew nuts in a blender with the oats and ice water and blend for 30s
- Drain the mixture in a nut milk bag or a clean cloth to separate the fibers from the milk
- Put the milk back in the blender and add the sugar, salt, and oil. Blend it for 1min at full power
- Now your milk is ready!
You can store it in the refrigerator for up to 3 days. But I think it you will finish it before that ;)
