If you like cookies and want to try something new, you have to try these vegan lemon biscuits with strawberry jam! This was one of the recipes I made with my family at the end of the year and that you asked me to bring to the channel. A super easy and simple recipe to sweeten your day or your weekend.

You can make these biscuits by hand or with a mixer, as I'm still recovering from tendinitis, I've been using my mixer a lot. But for this recipe you don't need it because it is very simple, just mix all the ingredients of the biscuit until it becomes a thick dough. If it's too hot where you live, you can let the dough rest for about 15 minutes in the fridge after mixing and before continuing to make it easier to work with.
You can play around with the flavours of your biscuits, change the lemon essence or the jam flavour and create your own recipe.
When I'm going to work with any dough I like to use a silicone mat because it helps a lot with the recipe, I can put it from the freezer or the fridge straight into the oven. If you don't have one, I'll leave the link to the one I use and other mats that I recommend:
INGREDIENTS:
250g (2 cups) all purpose flour
65g refined or caster sugar
1 teaspoon of lemon essence
1 teaspoon of vanilla extract
150g vegan margarine
1 tablespoon vegan milk alternative
Strawberry jam for the filling
Icing sugar for finishing
INSTRUCTIONS:
So add the flour, sugar, lemon essence, vanilla extract, vegan margarine and a tablespoon of vegan milk alternative in a bowl and mix with a wooden spoon or with your hands.
Flour your countertop or the silicone mat, work with the dough in parts to make it easier, and stretch the dough to a height of half centimetre. And every time you stretch the dough, switch the sides and dust it with flour to make sure it doesn't stick to your counter or mat.
Now with a glass or cookie cutter cut as many biscuits as you can. Join the edges, stretch the dough again and do this until you finish the entire dough. Remembering that it needs to be an even number! Because each unit will need two biscuits.
Now with a smaller cutter, or with the icing metal tip, remove the center of half of the biscuits that will be the top part.
Bake in preheated oven at 180ºC or 356° Fahrenheit for 10 to 12 minutes
Now just fill the bottom cookies with strawberry jam and place the top. Don't forget to look at the ingredients and check that there is no gelatine in the composition of your jam, because if it does have gelatine it is not vegan.
After filling and closing all the cookies, just dust them with icing sugar and they are ready!
