Christmas is coming and with it all the flavours and aromas that bring us fond memories. And there is nothing that reminds me more of Christmas than gingerbread cookies. So I couldn't help but bring a vegan version of this recipe here.

A super easy Christmas recipe that will make your home smell like the holiday season
This recipe is wonderful because in addition to being super easy, delicious, and making your house smell like Christmas, it's also a great activity to do with the family during the holidays as it's so much fun to decorate these little gingerbread men. So in this post I will also teach you how to make a vegan royal icing to decorate this cruelty free cookies.
INGREDIENTS:
Cookies:
150g unsalted vegan margarine
150 g granulated sugar
120g of molasses
3 teaspoons of ginger powder
3 teaspoons of cinnamon
1/4 teaspoon of cloves powder
1/4 teaspoon of nutmeg
1/4 teaspoon of bicarbonate of soda
380 g of all-purpose flour
Vegan Royal Icing:
300 grams of icing sugar
1 tbsp of lemon juice
3 tbsp of aquafaba
INSTRUCTIONS:
Gingerbread Cookies:
In a pan add the margarine, granulated sugar, molasses, and cook over medium heat until the margarine melts and everything mixes.
Then turn off the heat and add the ginger powder, cinnamon, clove powder, nutmeg, and baking soda and mix.
When everything is well mixed, add the all-purpose flour and mix, dissolving any flour pellets that have remained in the middle.
With the homogeneous dough taking care not to burn yourself, wrap the dough in clinging film and wait for the dough to cool. If you want, you can put it in the fridge to speed up the process.
Meanwhile, preheat the oven to 180°C or 356F.
When the dough cools down, flour the countertop and rolling pin if necessary, or use a silicone mat to stretch the dough without sticking and roll out the dough to a thickness of about half centimeter and cut the dough into the shape of a cookies of your choice
Bake your Christmas cookies between 8 and 12 minutes, the time will depend on your oven and the size of your cookies. Wait for them to cool down a bit before taking them out of the pan because when they are hot they are still a little soft and while the cookies cool down prepare the frosting to decorate.
Glacê:
In a bowl, sift the icing sugar
Add the lemon juice and the aquafaba
Mix it dissolving any sugar pellets that remain until it becomes a very smooth dough.
Store two-thirds of this frosting in an airtight container or bag, and the rest in a piping bag. To make it easier to decorate, put only the amount you can squeeze with one hand.
Cut the tip of the bag and now just use your creativity and decorate the cookies the way you want
