A traditional Brazilian dessert made with corn, in its creamiest vegan version. Curau is a dessert from the north part of Brazil, the taste is amazing but I always felt like it could be creamier. So I developed my own recipe.
Between June and July, we celebrate in Brazil the birthday of Saints Anthony, Peter, and John. With typical clothing, dance, and food. Curau is one of these traditional foods you can spot at a June/July Brazilian party. Since we are at this time of the year, I decided to make this super creamy Vegan Curau that is the biggest hit among my family and friends in every June party I do. Even tho this year I am far from Brazil, I couldn't miss out on this delicious dessert.
On the internet, if you look up information about Curau, it says it is a #corn dessert with a texture of dry porridge. But who wants to eat dry porridge? The Curau from the super easy recipe here in this post has a light corn flavor and the creaminess that a good porridge should have.
INGREDIENTS:
2 cans of corn
1 cup of vegan condensed milk or sugar - https://youtu.be/b0VN6abC46E
1L of vegetable milk (it just can't be oat or rice milk)
4 tablespoons of cornstarch
INSTRUCTIONS:
Remove all water from the corn. You can leave it in a sieve for a while to make sure there's no more water
Place all ingredients in a blender and blend until smooth
Strain the entire content of the blender with a strainer directly into a pan
Cook stirring constantly over medium heat until thickened
