Easy Vegan Cookie Recipe
This recipe has already become a favorite of my family and was approved by my non vegan nephews who kept asking my sister to buy cookies for them on shops. And guess what? Now they just want this cookie!

This recipe you make in 30 minutes, simple ingredients, zero lactose, without egg, quick and easy to make, pleases Greeks and Trojans. This recipe was born from a mix of other vegan recipes that I had found on the internet. It was years trying to reach the perfect consistency of the dough that can also be enjoyed raw and spoonable (since it won't go egg).
To make this cookie you will need:
Ingredientes for 15 cookies
- ½ cup of melted coconut oil (80g measure when melted)
- ½ cup of granulated sugar (75g)
- ¾ cup of coconut sugar (125g) or Demerara (105g)
- ½ teaspoon of salt
- ¼ of soy milk (50g)
- 1 teaspoon of vanilla extract
- 1 ½ cup of white flour (185g)
- ½ teaspoon of baking powder
- 100g of semi-dark vegan chocolate
Instructions
10min of preparation, 30min in the fridge, and 12min in the oven.
1. Mix the granulated sugar, coconut sugar, and salt with the melted coconut oil
2. When the mixture is uniform, add the soy milk and vanilla and mix
3. Now in another bowl, mix the flour and baking powder and sift this mixture over the liquid mixture and stir until the texture is uniform.
4. Add the chopped chocolate, mix and let it chill for 30min in the fridge.
5. Preheat the oven to 180ºC
6. With the help of two tablespoons or a scoop of ice cream, take balls of the dough and add them to a baking pan with baking paper.
7. Place the cookies in the oven and bake for 12min at 180ºC
