An easy and perfect recipe for a vegan breakfast, dessert, or anytime snack. Rich in protein and nutrients.
If you've never eaten #ChiaPudding you don't know what you're missing! This wonder is super easy to make, it's delicious and it's still healthy. The original version of this dessert has only 3 ingredients, chia, vegetable milk and the sweetener of your choice. But of course to bring it to you I would have to do something more special.
The secrets not to make mistakes!
A lot of people tell me they can't get the right consistency with Chia Pudding. Of course if you follow my recipe step by step you can't make a mistake, but as I want to give you creative freedom, I'll give you my little secrets.
It has 3 secrets that guarantee the perfect Pudding result. The first is the proportion of Chia to the liquid in the recipe, the second is the mixture, and the third is the refrigeration time.
The Perfect Proportion
The ratio is always 4 tablespoons to 1 cup of liquid. When I say cup, I am referring to the measuring cup, with 240ml. Using this measure, you can use water, juices, coconut milk, or other vegan milks to create your own chia pudding recipe.
The Secret of Mixing
Another thing that is very important for the result to be perfect is how to mix it. Calm down, I'm not referring to a special way to mix it. But after you mix the ingredients for the first time, wait 5 minutes and mix again. This way you will ensure that the seeds will be evenly spread across the pudding after the chia releases its slime.
Time
Timing is important for a good chia pudding for several reasons. If you wait less than 5 minutes to make the second mix it may not work. If you wait much longer than 5 minutes (but very much, like 1hr) it may not harden. And finally because if you don't wait around 2hrs with it in the fridge, it may not harden either.
As in this recipe, there is not only Chia Pudding but to beautify I also made vegan berry gelatin, let's talk about that.
Everything you need to know about Agar Agar
For those who don't know, gelatin is not vegan. It is made from the skin, bone residue, hooves, and bonding tissue of cows and pigs. So, gelatin is made from what is leftover in meat production.
That's why you won't find any gelatin recipes on this blog. Whenever I need a "gelatin" I will use carrageenan or agar, which are plant-based options.
Agar is a gelatinous substance derived from algae and was discovered in Japan in the mid-17th century. Since then it has been widely used in cooking, mainly for desserts as it withstands high temperatures, starting to melt at 85 degrees and harden at 35 degrees. When gelatin starting to melt at 35 degrees.
In this recipe, I used Flaked Agar Agar. I chose to use the flake option because I have a trauma with Agar Agar powder. The last time I bought it came with a greenish powder with a very strong plant flavor and smell.
Which brings me to another very important factor. When buying a good Agar-Agar, whether in powder, or flakes, buy a product that has no color, no smell, and no taste. A good agar agar has already gone through the refining processes and has only the gelatinous properties and nothing else.
Agar proportions
Basically, a tablespoon of agar flakes is equal to a teaspoon of agar powder or half an agar bar. But as the concentration can vary from brand to brand I suggest that, before proceeding with the recipe, you read the instructions on the package.
Ingredients:
For red fruit gelatin:
220g of red fruits
150g of sugar (or your preferred sweetener)
1 tablespoon of squeezed lemon
1 cup of water
2 tsp Agar Agar Flakes
For Chia Pudding:
2 cups of vegetable milk of your choice
8 tablespoons
Agave Syrup
Instructions:
Add the berries, sugar, and lemon squeezed into a pan and cook until the berries are slightly melted.
Add 1 cup of this mixture to a blender with water and the agar and blend until mixture is smooth. (If the cooked berries do not fill up 1 cup, complete it with water or juice)
Add the mixture back to the pan and cook for 5 minutes from the boiling point.
With a spoon, remove the foam that forms on top. (Optional)
And put the gelatin in the cups (Watch the video below to see how to do it diagonally)
Put the gelatin in the fridge for 30min, or until it is solid.
Meanwhile, mix all the ingredients for the pudding. Wait 5min and mix again.
When the gelatin is solid, add the pudding mixture and refrigerate for 2hrs.
Now just decorate with some mint leaves, berries, and enjoy!
